One year ago

One Year ago I couldn’t wait to meet you.  I wondered what you would look like. Would you have Dad’s nose? Would you have my eyes? Would you cry a lot or would you be quiet and content?  Would you be a good eater and a good sleeper or would we have countless midnight sing alongs and feedings?

 I would sit in your nursery in your rocker and imagine what it would be like to hold you and rock you to sleep.  Imagining the unknown scenarios of what it would be like to be your Mom. Happy and scared. Would I be good at being your Mom? Would I know what to do?
I did know a few things…

 I would love you more than I could fathom.
Your father and I would be the luckiest parents in the world.
And no matter what, I would always do everything in my power to protect you and make you happy.

Then you got here. And things just fell into place. I learned that you do have my eyes, but you still look just like your Daddy. You were are a very happy baby. Content, but not always quiet. You were always a good sleeper, but that isn’t surprising now because you are great at everything you do. You are strong and so capable for such a little peanut.  You are so much fun! You make me laugh. And you make me cry because I was right about those 3 little things.

I love you more than I ever could have imagined
Your Father and I are the luckiest parents in the entire world!

And I will always do EVERYTHING in my power to protect you and make you happy!

Now as your first birthday quickly approaches, I sit here watching you play and learn imagining what the rest of your life will be like. But those 3 little things? Those will never ever change!

Birthday Wishlist

With my birthday less than 2 weeks away, I thought it would be fun to share some of the things I have had my eye on! Of course anything from my Mother’s Day Wish List would be awesome as well!

1. New Sunnies- It is finally time to bite the bullet and toss my beloved Juicy shades. I have a pretty tiny face, so finding sunglasses that fit is hard.  I LOVE that they cat eye frames are coming back and these purple Ralph Lauren ones are adorable!

2. TOMS- I usually get a new pair of TOMS each summer! These are cute and simple and I think would match a ton of my summer clothes!

3. Ellen Tank Top– I JUST LOVE ELLEN! I record it while I am at work in the afternoons and usually watch it the next morning! I think this “Have A Little Fun Today” tank would be a great Summer tank!

4. New Makeup- I am running out of some of my essentials! I could definitely use a new foundation and eye highlighter! I love both products from Mary Kay

5. Target Gift Cards- Because who can’t find something they need at Target! AMIRIGHT!?

Mother’s Day

This was my first Mother’s Day that I really got to celebrate. Mother’s Day last year I woke up to get ready for Church, but Hallie had other plans for us! We instead went to the hospital and urged Hallie to stay in until a little closer to her due date! The rest of my day was spent on bed rest.

I think about how scared I was that I wouldn’t get to meet my girl and I really lift up in prayer the Mom’s who have lost their babies.  The Mom’s who have been waiting to be called Mom.

This year I was lucky enough to be able to celebrate with my baby girl.
We didn’t do anything extra special.  We just went to Church and spent a lot of the day snuggling. Then we went to dinner at my parent’s house.

This was the kid’s gift to Nana

My favorite part of the day was snuggling up last night and introducing her to Fantasia! She loved all of the music and animation! It was so fun!

On a side note! Please excuse my phone pics! Over the weekend, my camera cable got up and walked away! Hoping to get my replacement tonight!

A dream is a wish your heart makes!

I have recently acquired some new followers, so I thought it would be fun to do another little “getting to know me” type post! Here are 5 little dreams of mine, and I encourage you to share yours in the comments!

1. My Dream Vacation-  I would definitely choose Italy in a heartbeat for many reasons! 1. I would love to see where my Mother’s family came from in Catania Sicily. 2. I would LOVE to binge on the best Italian food in the world! Wine, Gnocchi, Bruschetta, yes please! 3. If I could just lay on an Italian beach undisturbed for like an hour, I might melt!

2. My Dream Job- Would be to work for Freshly Picked! The more I learn about this company and Susan Peterson, I am super impressed! I would love to be a part of that! Plus their product is unlike any other! Hallie and I both adore their adorable Moccasins! And I know for a fact that each and every one are made with love!

3. My Dream Car- I know it’s lame, but I would want the Mazda CX-9! Plenty of room for all of my kiddos, and so so pretty!

4. My Dream Skill- To learn how to sew, like really sew! With a sewing machine! I would LOVE to be able to make little outfits and things for Hallie!

5. My Dream Home Town-
I definitely left my heart in San Francisco! If I could choose one place to call home, it would be the city by the bay!

Hearty Bolognese Sauce

If you read my post about our crazy weekend, than you know that I made 2 sauces to top our Gnocchi for a Mother’s Day dinner for Christopher’s sweet Mom! I thought I would share the recipe for the Bolognese sauce because it is fairly simple even for a week night!

Ingredients:
  • 1/4 cup extra virgin olive oil
  • 1 medium yellow onion chopped
  • 2 garlic cloves peeled and chopped
  • 1 celery stock coarsely chopped
  • 1 carrot coarsely chopped
  • 1 lb ground beef/ground turkey
  • 1 (28 oz) Can crushed tomoatoes
  • 1/4 cup chopped parsley
  • 8 fresh basil leaves chopped
  • salt and pepper to taste
  • top with shredded Parmesan or Romano cheese 

Steps:
In a large skillet heat the olive oil over medium heat,  Saute onion and garlic until soft and translucent, Add carrots and celery and cover for 5 minutes, lifting lid every minute to stir. Add the ground meat and raise to high heat to fully brown meat while breaking it up. Once meat is fully browned add tomatoes, parsley and basil and stir over medium heat for a couple minutes.  To finish add salt and pepper to taste.  Top with cheese and enjoy!

It must have been the full moon!

Have you ever had one of those days where you feel like you are cursed? Where everything you touch crumbles, and you have to check the calendar to make sure it’s not Friday the 13th? Well that was my WHOLE weekend!

If you don’t remember, on Friday I was VERY excited to have my first girl’s night away from Hallie since October! Not to mention I haven’t had more than an hour or so away from her since January (but this only included time for me to get chores done or go to work to take care of other kids minus mine) so this really was a MUCH needed break!

On Friday evening I am leaving work giddy excited to get a yummy dinner and try a new swanky dessert place in Dallas with my bestie, when I get in the car to our check engine light on…GREAT! I immediately called my husband who kindly suggested that I still go out, but have my friend Joyce pick me up, and he’d work on the car. So I agreed and called Joyce. We made plans to do something closer to home (since she was already in Dallas it didn’t make sense for her to be driving back and forth so many times!) While waiting on Joyce, Christopher discovered that all was fine with the car and that it needed just a small repair that didn’t affect the safety or performance of the vehicle, AWESOME! So I was calling Joyce to let her know all was good and that I could still meet her if she wanted to, and the poor girl informed me that she had gotten in a minor wreck! I felt just TERRIBLE! Thankfully she was okay, but we decided to reschedule our night out for another night. This freed Christopher up to head out to his fishing trip a few hours earlier than expected, so it was just me and Hallie! After putting her to bed, I decided not to let the night’s unfortunate events get me down and planned to take Hallie to one of my favorite brunch spots in the morning!

On Saturday morning, I decided to pull up the menu to this restaurant, and came to find that they had closed! Super bummer! So I made some pancakes and sausage for me and the little miss.

Later in the afternoon I packed up all of the groceries I bought to make a nice meal for Christopher’s Mom and family for an early Mother’s day celebration! I got all of the ingredients to a pesto sauce in my Father in Law’s food processor and clicked it on….nothing happened…I switched the plug to the outlet where I was charging my phone…again nothing… Okay so it’s a defective food processor. I decided to pull out the blender. Which I can only find half of! My sweet mother in law then steps in and tries to help me think out a new plan.  What about the blender in the bar she suggests! Good thinking, I tried that and it was rusted…darn! So my Mother in Law calls my Brother in law who lives close by and asks if we can borrow his blender. He agreed and my mother in law was back with it in no time! I transfer all of the ingredients over and go to turn on the blender….which starts smoking! If you are keeping count this is now the 4th attempt to get my pesto sauce blended! So now my Mother in Law get’s creative. She puts 1/2 of the ingredients in my Father In Laws Magic Bullet  which is small so we would have to do it in steps. She turns it on…NOTHING! You can’t make this up! We again try my phone in the outlet, and it works great! WHAT THE HECK! One more call to my brother in law who is kind enough to bring over his food processor over. We transfer the ingredients….and….IT WORKS! I about died! After 6 attempts, we were finally cooking!

Pesto Cream Sauce

We had a nice meal, and as we were leaving my mother in law points out the giant FULL MOON! Well no wonder!

I also made a Bolognese Sauce

My brother in law also made a Focaccia Bread which thanks to our late dinner everyone snacked on! 

He also made a yummy Tiramisu

Sunday my bad luck didn’t stop! I went to get Hallie’s formula and my Similac check got stuck in the check machine and took the attendant 10 minutes to get it out.  Then last night Hallie and I both had middle of the night allergy attacks and couldn’t sleep! We are running on empty this morning!

Oh hey, Friday!

Something exciting is happening this Friday you guys! It’s going to be my first girl’s night out (without Hallie) since like OCTOBER! No I am not exaggerating! This is going to be grand! Make sure to look out for an update on Monday! Hallie’s Memi is coming in from Houston again this weekend to celebrate Mother’s Day with us! (Don’t freak out, you still have another week to pick out your cards and buy your flowers!) Can’t wait to share all about our busy weekend on Monday, but on to Oh hey, Friday.

Here are some of my favorite moments from our week:

1.

This kid loves pulling out every toy from her toy box, and within minutes she can destroy a cleaned room!

2.

Hallie has been very into this whole “I can do it myself” phase. Especially with feeding herself!

3.

She also likes to feed Stella! These were her leftovers after we cleaned her off!

4.

Hallie’s replacement toy from Hasbro, we had a defective toy so they sent us this! We are still unsure if she likes it! This was about 5 seconds before she fell off and started attacking it out of anger! It was the funniest thing I have ever seen!

She does however LOVE the box!
